Nigiri is the most popular osushi in Japan. Nigiri is made from a slice of raw fish or clam and also rice. Nigiri was made in Edo period as a street food. At that time, there was no way to preserve rice and raw fish for a long time, so people put the vinegar and allowed it not to expire soon.
